Potli means pouch in Hindi. India's top chefs kept their secret spice blend in a small cloth pouch and took it away after cooking, so nobody could copy it.
Uttam Tripathy grew up in Sambalpur, Odisha, trained in Chennai, and opened Potli in 2011. Head chef Babul Dey has cooked here since the day it opened, grinding over 35 fresh spices daily. 2026 is our fifteenth year.
